Amber tea is made from mature stems and leaves, like Arrieulat branch tea , it results from a combination of fermentation and roasting. Producer Thomas Bernardi first put it in a wok as if to make green tea, then wrapped it in a cloth, while the leaves were still damp, to initiate controlled fermentation over several hours in a jar. This is when the tea turns yellow and the twigs take on this beautiful bronze hue. Then he finishes with several roasts to completely dehydrate the tea and give it this toasted side. The leaves are raw, with beautiful amber reflections. In the cup, it develops woody, roasted notes, with a slightly fruity freshness in the background, the tannins are supple, bringing roundness to the body. It is one of those teas that you can forget in your teapot without there being an unpleasant astringency. It contains little theine. Attention fans!
